How is Sukku/Dried ginger coffee made?
Fresh ginger is cut into small pieces and cleaned thoroughly to remove all the dirt and stains. They are placed in a tray or a big cloth in an open place to dry under the sun for hours until the water content is completely dried.
A cloth is placed over the ginger pieces to avoid dust affecting them. They are then collected and churned in the mill to get fine dried ginger powder. Spices like black pepper, cumin, and coriander seeds are added to the mix to make it healthier and spicier.
