How is Palm Jaggery made?
Palm Jaggery is made from the sugary sap of the Palmyra palm. The inflorescence is gently tapped with a mallet for a thick white liquid ready to be naturally produced. The ends are sliced and a pot is placed to collect the liquid. This process takes two days to collect the liquid called sap or sweet toddy. The sap is collected in the pot. It goes through various purifying stages. It is poured in huge containers and boiled till it becomes a thick syrup and is poured into small coconut shells and dried in the sun to get pure Palm Jaggery.
